Preheat oven to 350?br />
In a large bowl, sift together:
2 cups sifted flour
1 ?tsp. cinnamon
1 tsp. baking soda
?tsp. salt
2 cups sugar
In a second bowl, mix:
1 Tbsp. lemon juice
2 large eggs
?cup vegetable oil
Fold the wet ingredients into the dry ingredients and add:
4 cups apples, peeled and diced
1 cup chopped walnuts (optional)
Grease and flour a 13?x 9?pan, add the batter, and bake 45 minutes to 1 hour.
